From Care Farm to Kitchen; a journey for Josh

One of the really great things about working at Greenslate Farm is watching people extend themselves and develop. Just as the crops spring up and grow, so do the learners in the Care Farm environment.

Josh started on the Care Farm, feeding the goats and collecting the eggs, something he still loves to do. But when the Straw Bale Cafe opened, it was an opportunity to increase his skills; he grabbed it with both hands.

This isn’t the first time that Josh has gone out of his comfort zone though. Traveling independently used to be an issue for him. However, following a travel training program, Josh regularly travels into the farm now using public transport.

It is in the kitchen though that Josh seems to be destined to succeed. He clearly loves his baking; I have just had one of his Lemon Meringue Pies and it was one of the best I have ever eaten, and I have eaten a lot of Lemon Meringue pies in my time, it’s one of my favourite treats.

When he is not in the kitchen, you can often find Josh in the office researching new recipes on the internet. So, he gets to work through the whole process from the initial idea of what he wants to cook, right the way to producing something that is good enough to sell (and have customers raving over) in the cafe.

Moving things up a gear, perhaps Josh will act as an inspiration to other would be cooks at the Straw Bale cafe. This morning he was working with two new students, taking trial sessions in the cafe kitchen.

Aaron and Christian from Wargrave House School and College in Newton-le-Willows, turned out some amazing Chocolate Brownies, and their tutors were keen enough to give their baking a try.
