Our new chef Mark has been wowing our customers with the ‘specials menu’ created in our kitchen. Mark has a passion for fresh ingredients and loves the challenge of turning what we grow on the farm into exciting and tasty dishes.
If you are familiar with the Robin Hood in Orrell, Mark used to work as a chef/manager way back.
Mark said, “The best thing about working at Greenslate is that it is in a lovely situation, all the people are nice and I have started to really enjoy cooking with all the ingredients grown on the farm. The staff are good and it is great to work with the Learners when they come into the kitchen. I can see now that over the next few months we can develop the cafe into something really special.”
I spoke to Mark when he was cooking for one of the farm’s music evenings in the Straw Bale Cafe. On the menu was Greenslate Roasted Vegetables. Mark said, “it makes you think, everything in this dish is from here; onions, potatoes, garlic, courgettes, beans, peppers, tomatoes and of course, all the salad leaves that will accompany it.”
Mark explained, “for me this early period of my time here has been very much about development. Pretty soon, we will be ‘fully armed’ to take things up a notch and make Greenslate Farm’s Straw Bale Cafe a real ‘go to’ place, a ‘culinary destination.’”
Our cafe and shop have also started to make connections with local suppliers like ‘The Muffin Man’ bakery for our bread. People can taste it in the cafe and now buy it in the shop, so it’s great to be supporting other local businesses.
